The cow is outta the bag! Crain’s Chicago Business announced this week that local BBQ entrepreneur Jovanis Bouargoub–known for his series of Porkchop restaurants across Chicago, most recently on South Dearborn–will be bringing a new meat-centric concept to Roosevelt Collection this fall. Known as Chop, Bouargoub calls the new concept an “Everyman’s Steakhouse” that will feature grass-fed, locally sourced burgers and steak dishes, including the classic T-bone and a fried steak. The restaurant will be 2,300 SF, and will also feature a bar and varied seating options.
